Turkey Bolognese

What’s for tea tonight? Stuck for ideas? Try this Turkey Mince Bolognese:

Ingredients (Easily enough for 3 people, or 2 hungry people 😂):

500g lean (2%) turkey mince.

1 chopped onion.

2 x chopped carrots.

6 x chopped sticks of celery.

300g sliced mushrooms of choice.

1 tbsp tomato purée

2 x 400g of chopped tomato.

500ml of chicken stock.

Oregano.

100g of wholewheat pasta ( this would also be good on a jacket spud or with rice- you choose).

 

Turkey Bolognese

Method:

Gently fry the turkey mince until browned. Tip onto a side plate & put it to one side for now.

In the same pan you used, cook the onion, carrot & celery until they all go soft. Then add in the mushrooms, stir through, then the tomato purée, continually mixing/stirring it all through.

Add the chopped tomatoes, previously cooked turkey & chicken stock, then sprinkle some oregano into the mix.  Simmer for around 20/30 minutes.

If you are opting for pasta, weigh it & cook it whilst the bolognese is simmering. Or bang your spud/rice in the microwave.

Stick it all together & you are done!
